Peppermint Meltaways


You have not had a good cookie until you've had one of these!!!  Okay, maybe not really, but they are that good!  They may seem a little Christmasy, but they are good anytime of the year.  (At our house, we stock candy canes at Christmas time so we can use them for baking throughout the year.)

And guess what else?!?  These cookies literally melt in your mouth . . . . especially when they're fresh!  I'm pretty sure everyone at our house likes them . . . except Reid:(  Oh well, I guess there's more for the rest of us then!

These cookies are easy to make and they're delicious . . . so why don't you go whip up a batch of them right now!?!?



Peppermint Meltaways

1 cup butter, softened
1/2 cup confectioners' sugar
1/2 teaspoon peppermint extract
1 1/4 cup all-purpose flour
1/2 cup cornstarch

Frosting:
2 tablespoons butter, softened
1 1/2 cups confectioners' sugar
2 tablespoons milk
1/4 teaspoon peppermint extract
1/2 cup crushed candy canes

In a small bowl, cream butter and confectioners' sugar until light and fluffy.  Beat in extract.  Combine flour and cornstarch; gradually add to creamed mixture and mix well.

Shape into 1-inch balls.  Place 2 inches apart on ungreased baking sheets.  Bake at 350 degrees for 10-12 minutes or until bottoms are lightly browned.  Remove to wire racks to cool.

In a small bowl, beat butter until fluffy.  Add the confectioners' sugar, milk, and extract; beat until smooth.  Spread over cooled cookies; sprinkle with crushed candy cane.  Store in airtight container.  Yield: 3 1/2 dozen.
