Baker's Review Wednesday 23: Jimmy's Mexican Pizza


Jimmy's Mexican Pizza

1/2 pound ground beef
1/4 onion, diced
1 clove garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 can refried beans (from a 16 oz can)
4 (10 inch) flour tortillas
1/2 cup salsa
1 cup shredded cheddar cheese
1 cup Colby cheese*
2 green onions, chopped
1 large roma tomato, diced
sour cream (optional)

*You can use all of one kind cheese or mixture of whatever you have on hand - just use 2 cups total.

Preheat oven to 350 degrees F.  Coat 2 pie plates with non-stick cooking spray.  Place beef, onion, and garlic in skillet over medium heat.  Cook until beef is evenly browned.  Drain off grease.  Season the meat with chili powder, cumin, salt, and pepper.  Lay one tortilla in each pie plate, and cover each with a layer of refried beans.  Spread half of seasoned ground beef over each one, and then cover with second tortilla.  Bake for 10 minutes in the preheated oven.  Remove the plates from the oven, and let slightly cool.  Spread half of salsa over top tortilla.  Cover each pizza with half of each cheese.  Place half of tomatoes and half of green onions on each pizza.  Return pizzas to the oven, and bake for 5-10 more minutes, until the cheese is melted.  Remove from oven, and let cool slightly before slicing each one into 4 pieces.  Serve with sour cream, if desired.


This pizza was very delicious and fairly simple to make.  It's perfect topped with a bit of sour cream!  I would definitely make this again:)

Beautiful Winter @ Centerville Grange


This was taken at Centerville Grange on Saturday at our annual Rhoades' Christmas Dinner.  It was beautiful and it was foggy; not all that much snow, but pretty nevertheless.  I just thought I'd share this photo.  More will probably be coming soon . . .:)

Baker's Review Wednesday 22: Reindeer Feed {Candy Cane Chex}


Reindeer Feed

6 cups Rice Chex
1 bag (12 oz) white chocolate chips (2 cups)
1/3 cup coarsely crushed peppermint candy canes (3-4 regular size)

Line cookie sheet with waxed paper.  In microwavable bowl, melt white chocolate chips, stirring every 30 seconds until melted.  Stir in half the crushed candy canes.  Pour over cereal; toss to evenly coat.  Spread mixture in single layer on cookie sheet.  Immediately sprinkle with remaining candy cane.  Let stand until set.  Gently break up coated cereal. Store in airtight container.  Enjoy!

This was really good and also simple to make.  I would definitely make it again, as it's a great quick and easy snack!!

Scrappy Christmas Frame

Last year I made Christmas Countdown Blocks and I had some scraps left over.  I cut them into pieces and mod podged them onto a painted frame to make this little lovely!  I love it!  It was fairly simple to make and it was, say, about 25 cents, I believe.  We had everything already, but I know the frame was 25 cents:)

Baker's Review Wednesday 21: Egg McMuffins


Egg McMuffins

1 english muffin
1 egg
1 slice ham
1-1 1/2 slice american cheese
salt
pepper
butter

Split muffin and place in toaster.  Meanwhile, fry the egg, seasoning with salt and pepper.  Right before you flip the egg, place ham on pan and fry on both sides, just to get it warm.  Flip egg and place ham on top, and then cheese.  Cover and turn down heat.  When muffin is done as desired, butter it.  When cheese is melted place egg layer on muffin & enjoy!!

Note: Instead of ham you can use sausage or bacon.

These are so delicious and I absolutely love them.  Hope you will too!!

Baker's Review Wednesday 20: Microwave Caramels {and Country Fair Bazaar}

Microwave Caramels

1/4 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup light corn syrup
1/2 cup sweetened condensed milk

Combine all ingredients.  Cook 6 minutes, stirring every 2 minutes.  Stir and pour into lightly greased bread pan.

This recipe sounded so good and easy to make, but it didn't exactly turn out.  As is why I didn't even bother taking a picture of it.  It does not even compare to real homemade caramels!!  It also should've been cooked longer.  It would not hold it's shape; it would just droop down and was just a sticky mess trying to eat it:(  I just thought of something, though.  I made a double batch, and that might have been why 6 minutes wasn't enough??  Not sure though:)  We decided it tasted kind of like a topping we use on a delicious Chunky Apple Cake!!  We may try warming it up a bit and putting it on ice cream.  We shall see . . .

Artisan Fair Bazaar!!!

My Mom, my sisters, & I are doing a bazaar this weekend!!  It's Friday night and Saturday.  I would love if anyone could attend; we would be SOOOOOO happy to see you there!!

Here are all the details:

Baker's Review Wednesday 19

So hello everybody!!  This week I didn't bake anything, due to the fact that I've been BUSY crafting and finishing everything up for the bazaar that is this Friday evening & Saturday!!  It's been lots of fun, but I didn't bake this week, so I have no recipe or review to share with you:(

The Old . . . and the New


My grandma gave us kids a bunch of change to divide between us, and look what I found in my stack.  A penny from 1953 (I think - that or 1956), and a penny from 2011.  Totally made me think the old and the new.  The old one the shine has worn off and it's very dark.  The new is bright and shiny and still the original color.  Time definitely changes things!!

Baker's Review Wednesday 18: Blueberry Mistake Cake {Linky Party}

This cake was originally made by someone else, but I know the story to it - it was made from a mistake, so I now am calling it Blueberry Mistake Cake:)

Here's what happened:  Someone was making cookies and it called for a yellow cake mix.  She accidentally made the cake and then she couldn't make it into cookies, so her mom told her to put some blueberries in it and sprinkle cinnamon sugar on top.  Anyway, it was delicious and I'm glad she made that mistake!!


This cake is so moist and yummy!!  The blueberries sink to the bottom of the cake and I don't know why, but that just makes it SOOO good!!  I think the second day it's even better than the first!!

"It's kind of bazaar" {Bazaar Progress}

Here are just a couple of the things in progress/made for the bazaar.  There's still other things I'm planning to do, but I need to go to Joann's to get some supplies . . . and some things I've simply not got done yet:(  I need to start working really hard to get everything done - I've only got about 2 weeks left!!  Can't believe it's upon us already:)

I've now got most of the headbands of the work in progress pic done, and they others are all put together, ready to put on alligator clips & a couple more headbands (I need to get more headbands).

I will also be making more bags once I go and get the fabric.

I am wondering about maybe making some belts similar to The Red Garden Belt, but I don't know for sure yet.  It will probably depend if have time or not.  Of course, if I really want to, which I kind of do, I will just make time for them:)

I am also doing some other things that aren't pictured, and some butterhorns.  They went pretty well last year:)

Baker's Review Wednesday 17: Apple Cinnamon Muffins {Linky Party}

Yesterday I made Apple Cinnamon Muffins.  I've made these several times, and they're always delicious!!  They're especially good, nice and warm, slathered in butter:)  Yummy!!



I guess I don't really know what everyone else thinks of them, but they eat them every time I make them, so they're not disgusting anyways:)

Baker's Review Wednesday 16: Yummy's to Make

So I didn't end up loading on pictures of the recipe I was going to share this week, so I decided I'd share some yummy things I'd want to make sometime!!  :)

 One of the things I would like to make are Caramel Apple Bites.  Rather than caramelizing a whole apple, It would be nice to do just a slice or a bite . . .so much easier . . .nummy-licious . . . I LOVE Caramel Apples:)

Potatoes. Boil, lightly smash, drizzle with olive oil, salt, and pepper, and bake till slightly crispy.
They look sooo good!!

And that will be all for today, although I am sure there are lots of other recipes I would love to make!!
