Baker's Review Wednesday 23: Jimmy's Mexican Pizza


Jimmy's Mexican Pizza

1/2 pound ground beef
1/4 onion, diced
1 clove garlic, minced
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 can refried beans (from a 16 oz can)
4 (10 inch) flour tortillas
1/2 cup salsa
1 cup shredded cheddar cheese
1 cup Colby cheese*
2 green onions, chopped
1 large roma tomato, diced
sour cream (optional)

*You can use all of one kind cheese or mixture of whatever you have on hand - just use 2 cups total.

Preheat oven to 350 degrees F.  Coat 2 pie plates with non-stick cooking spray.  Place beef, onion, and garlic in skillet over medium heat.  Cook until beef is evenly browned.  Drain off grease.  Season the meat with chili powder, cumin, salt, and pepper.  Lay one tortilla in each pie plate, and cover each with a layer of refried beans.  Spread half of seasoned ground beef over each one, and then cover with second tortilla.  Bake for 10 minutes in the preheated oven.  Remove the plates from the oven, and let slightly cool.  Spread half of salsa over top tortilla.  Cover each pizza with half of each cheese.  Place half of tomatoes and half of green onions on each pizza.  Return pizzas to the oven, and bake for 5-10 more minutes, until the cheese is melted.  Remove from oven, and let cool slightly before slicing each one into 4 pieces.  Serve with sour cream, if desired.


This pizza was very delicious and fairly simple to make.  It's perfect topped with a bit of sour cream!  I would definitely make this again:)
